Message From Debbie
Our all-women-over-40 adventure on the Colorado River* was beyond perfect! The team of guides (women-over-40 in training) were competent, inspirational and fun. Not once did I wake up without hearing the sound of women laughing and a day didn't go by without the sound of singing, sometimes just a quiet humming of a familiar tune, the resonating echo of a sweet voice inside a side canyon or the lovely harmony around a campfire.
The Canyon itself is an awe-inspiring back-drop for any activity and whether folks were in the paddle raft following the commands of their guide as they splashed through the rapids, keeping their paddle blade in motion as they navigated the river in an inflatable kayak, kicking back while a guide rowed and entertained or educated, or hiked beside robin's egg-blue, side streams, it would be difficult to improve upon the experience.
And the most important pieces of the puzzle which included; the location, the weather, food, equipment, activities, guides and the pace of our journey- were the women who joined us. I was constantly being thanked by women as one spectacular moment led to another, but it was me who was truly grateful for each woman's good humor, willingness to participate in a wilderness river adventure and for many, their continuing to choose Explorations in Travel when looking to get away (from it all, or most of it, in this case!).
So thank you all, whether you were on the river or some other adventure with me, or are planning to join me somewhere else in the world. In the words of our lovely and young river guides; YOU ROCK!

Belize
Beaches, snorkeling, ruins, wildlife! February 13-22, 2009. Only 3 spaces are available for this fabulous adventure. You will have the opportunity to experience a variety of the country's habitats. Spend nights in the rainforest AND on a small caye in the Caribbean. Come face to face with black howler monkeys that descend from the trees. We'll be snorkeling on the world's second largest barrier reef. This is an adventure vacation that has something to offer everyone!

Go On It's Good For You!
The-Best-for-Last Chocolate Mousse
Time: 10 minutes
12 ounces soft silken tofu, drained
2 teaspoons vanilla extract
1/8 teaspoon almond extract
1 cup semisweet chocolate chips, melted
1/2 cup fat-free Greek-style yogurt
Place the tofu, vanilla extract, and almond extract in a food processor and blend until smooth. Add the chocolate and blend for 1 minute. Scrape the sides with a rubber spatula and blend for 1 minute longer or until incorporated. Pour into a large bowl.
Fold in the yogurt just until blended. Refrigerate until ready to serve.
